Michelin Starred chef Shaun Rankin has announced the opening of his own restaurant ‘Ormer’.
The much-anticipated venture is due to open in May 2013. The building, based in Don Street, will deliver a sophisticated new restaurant and bar to the heart of St Helier. The location has been chosen to be convenient to the corporate market, shoppers and town residents and enhance the vibrancy of the historical centre.
Shaun is working with a number of local contractors to bring the project to fruition. The team are working on two floors; the ground floor is set to house the main restaurant and bar and the upstairs will be home to a luxurious private dining room and bar.
The team have been working with one of London’s most celebrated interior designers Martin Brudnizki. His work includes Soho Beach House Miami, Annabel’s London, 34 and Jamie’s Italian. Martin’s designs for Ormer are sophisticated and timeless incorporating bespoke furnishings, aged leathers, silk wallpapers and distressed oak paneling.
To mark the new venture, Shaun has launched an apprentice scheme offering a life changing opportunity for two young Jersey people. He is looking for one front-of-house and one kitchen apprentice. The fortunate candidates will be awarded three years support and paid training under the wing of celebrated chef Shaun Rankin. They will learn the trade, undergo professional certification at Highlands and then be placed in a position at the end of the scheme in a leading European establishment. Shaun will be inviting applications for the roles up until 30th April, the apprenticeship will not begin until September enabling new school leavers a chance to apply.

‘This is such an exciting project for the whole SR team and something I have aspired to for a long time. I am honoured that Martin Brudnizki agreed to come on board and I can’t wait to reveal Ormer to all the people who have supported me in Jersey over the years. Launching the apprentice scheme is really important to me, I have always worked with young people in the Island and I know there is a great pool of talent out there. I hope to give two young stars some support and encourage people to consider the hospitality industry as a career.
My attention at the moment is on the refurbishment and we have a lot to do but we are receiving so much encouragement – we already have pre-bookings up to January 2014! We are also working on marketing and I’m very pleased to announce the name. I wanted to choose a name with a deep connection to Jersey; an Ormer is special and considered the King of the Jersey shoreline and I hope to reflect some of that ethos in the restaurant.’
Apprentice applications need to be sent to firstname.lastname@example.org by 30th April. They should include up to 500 words in the candidates own words as to why they want to be considered and a CV. The age range for entrants is 15 – 25 years and applicants must be locally qualified.
